Healthy Summer Lunch Ideas

I don't know what hit me, but this week I decided I would eat completely healthy, for real. You all know how it is... Sunday night you go through Pinterest and decide the next week you'll eat 100% nutritiously with no dessert, little carbs, etc. And then when reality strikes (usually Monday night, or Tuesday if you're lucky), you cave in and have 3 cookies and your whole plan fails. Something about this week, though, was different for me. I've been super sick with a sinus infection and just got really motivated to get better from that as well as shed some extra calories from freshman year! Lately, I've really been overindulging in sweets so I decided to see if I could cut out dessert until Friday. Besides that, I just wanted to eat mostly whole foods with healthy carbs like brown rice and quinoa rather than white bread and pasta. Have I been successful? Surprisingly, yes! I think it hit me that we're almost to July and I've still managed to drag these college eating habits with me this long, which really started to bug me. So, here we are on Wednesday and so far I've surprised myself with both my eating and workouts so far. And the best part? I feel so much better and have learned to really enjoy what I'm eating. I appreciate fruit so much more (does it really get better than a peach after dinner?!) and notice that I'm a lot less hungry than I thought! 

So with all of this in mind, I wanted to create a post for summer lunch ideas for all of the working girls out there that want something simple and easy to make. Of course this is totally applicable if you aren't at an office or if it's the weekend, etc. Check out my two favorite summer lunches as of late below!

:: Tuna on Toast with Fruit ::
Protein is so important for me at lunch because I need to stay full until I get off work at 4:30. Tuna salad is something I love and isn't terrible for you, especially when you balance it out with some fruit. Berries are so good right now, and getting a little Vitamin C from some clementines will boost your immune system too. I've been loving carrots and hummus lately as a snack or an addition to my lunch!

:: Spinach and Quinoa Salad with Raspberries ::
This is really similar to  this salad I made but is kind of like the leftovers version. On Sunday night I meal prepped for the week by whipping up a bunch of quinoa and lemon chicken. I didn't include the chicken in this lunch, but I've absolutely been loving spinach with quinoa and berries, and then a light vinaigrette to top it off. And since I've been on my hummus kick, some carrots and these sprouted bread crisps make the perfect addition for a little crunch. 

I've also been working with a trainer twice a week for a few weeks now, and she can already notice that I'm getting stronger each week that goes by. If you're interested in hearing more about that or seeing some of the strength training I've been doing, let me know in the comments below!
