Recipe: Citrus + Raspberry Salad

After spending the day at my lake house, Fran and I decided to whip up a fresh salad for dinner on Saturday. Soaking up sun for a whole day makes you crave something cool and fresh to eat, so this salad was the perfect way to cure our hunger! Salads with fruit in them always used to intimidate me... I'm the type of person that likes to keep savory and sweet separate, especially when it comes to salads. But, I right before leaving school my friend convinced me to put a little citrus on my salad and let me tell you, it totally changed the game. We thought it would be fun to put raspberries and oranges on top, and it was absolutely delicious. Fran is a dressing pro and threw together a super yummy homemade citrus dressing - I can't wait to build this same salad for lunch every day this week! Scroll down to see how we made it all :) 


1. Wash romaine lettuce, chop it up and throw it in a bowl.

2. Cut up an orange and toss in the slices along with raspberries.

3. Pan fry chicken with lemon, garlic, olive oil, salt and pepper on medium heat until it browns.

4. Pour some quinoa in a pot, fill it with water and keep it cooking until it expands and forms into a grain size.

5. Mix together olive oil, white wine vinegar, squeezed lemon juice and lemon zest into a jar and shake it. Taste it a few times to make sure the portions work well together!

6. Plate it all and pour the dressing on top of everything so it tastes lemony and delicious!

I can't wait to make this with my leftover chicken for lunches at work this week... I seriously don't think I'll get sick of how good this is!!

  2. I've been on a kick of adding walnuts or almonds and dried cherries or cranberries to my salads, the mix of salty and sweet with the freshness of the salad tastes amazing!
