It's funny how when you spend a lot of time with people, you start to do things like them. After being with two of my really athletic, healthy friends, I started to adapt to their way of life too. Every morning, we ran 2.5 miles (a very uphill, butt-kicking workout, ugh) and then come back to the cottage and make a big healthy lunch. So when I was back home, I continued our early afternoon ritual and whipped up a big yummy breakfast before I went to play tennis. It was ah-mazing and fun to make, so I thought I would share it with you in case you're in need of a new breakfast idea!
It's nice because you get the protein and veggies from the scrambled eggs, but also a sweet, juicier taste from the fruit. Not to mention, all of the ingredients are super fresh and keep you full for a long time!
+ Eggs
I scrambled 2 medium eggs in a pan and then added in some chopped peppers and broccoli. For a little extra protein, I threw in a piece of Canadian bacon too. It really depends what kinds of veggies I add based on what's in my refrigerator, but spinach and onions would have been delicious too. Add a dash of salt and pepper at the end and you have a hearty breakfast!
+ Fruit salad
Since we had a ton of fruit after a recent trip to Costco (god bless their giant fruit section), I threw together a fruit salad to get in some vitamins as well. They say you should try to make your meals really colorful, and the fruit + egg combination definitely accomplishes that!
I've never been a big egg person until now and I have to say, I kind of love it!

I love fresh fruit for breakfast! Mine is usually a vegan smoothie since I'm on the go in the morning. Protein is super important in a breakfast, just to start the day off right!

Ugh, that looks amazing! When I have time I like to make an omelet with eggs, cheese and some fresh tomatoes in it!
