Whenever my mom asks me what I want for dinner, I say: "I don't know, but something healthy". I definitely fall into the routine of eating a meat, a carb and some sort of vegetable for dinner, and lately I've been wanting to change it up. With summer quickly approaching (gotta get that bikini bod, amirite) and a craving for something a little more fun, I did a little Pinteresting to find some recipes that are nutritious and far from your typical dinner. My favorites? Stuffed bell pepper, lettuce wraps, orange chicken and pesto pasta salad. This website has a bunch of great lunch or dinner ideas that are perfect for warmer months and are simple enough to take under 25 minutes to prepare.
