This is one of my favorite recipes, and also one of the easiest ones I know. It's perfect for summer soirees, as a chic appetizer or even as a quick afternoon snack. I make this bruschetta all the time and it literally takes under fifteen minutes. Here's what you do:
Ingredients:
french baguette
olive oil
garlic salt and pepper
pico de gallo
basil to garnish (if desired)
+ one
Pre-heat the oven to 350 degrees.
Slice the baguette into narrow pieces and place the slices on a cookie sheet.
+ two
Pour some olive oil into a small bowl or measuring cup and sprinkle in some salt and pepper. Use a pastry brush to paint the olive oil onto each slice of bread. Pop the cookie sheet into the oven and keep it in until the slices become slightly golden brown or a little crispy.
+ three
Drain the pico de gallo in a small strainer so that it is moist but not runny.
+ four
Take the slices out of the oven and put them on a large plate or serving tray.
+ five
Spoon a small amount of pico de gallo onto each slice of bread.
+ six
Sprinkle on a teeny bit of salt and pepper and garnish with basil if you so desire!
If I were having a dinner party, this would definitely be my go - to recipe.
Do you have an appetizer you go back to again and again?
